Eggplants and Chicken Stir-Fry with Chilli Bean Paste

We rounded some of the benefits of eggplants in a previous post Eggplant and Minced Beef Stir-Fry. They are really good for your body and they absorb flavour very well. In this post we show you a recipe that stir fries eggplants with chicken strips. It’s a little bit spicy and very flavourful. IMG_1326 Ingredients:

  1. Eggplants: 2
  2. Chicken thigh: 4 pieces OR Chicken breast: 2 pieces
  3. Onion: 1/2
  4. Cilantro: a bunch
  5. Chilli bean paste: 1 tbsp
  6. Soy sauce: 1 tbsp
  7. Cooking wine: 1tbsp
  8. Seasme seed oil: 1 tsp
  9. Pepper: to taste
  10. Salt: to taste (optional)
  11. Sugar: to taste
  12. Corn Starch: 1tsp

Steps:

  1. Slice the eggplants, microwave the eggplant strips for 10 minutes. This way we give the eggplants a head start and makes them easier to be fully cooked.IMG_1312
  2. Slice the chicken; add salt, sugar, black pepper, corn starch, cooking wine, and sesame seed oil; mix and let it sit for 10 minutesIMG_1299

  4. Heat pan on medium/high heat, add 1 tbsp oil, add chicken strips and stir until they look 80% done, then take them outIMG_1315
  5. Add onion to pan, then add the eggplants, soy sauce, chilli bean paste, sugar, and stir for about 5 minutes until the eggplants are completely softIMG_1319
  6. Add chicken back to pan, then cilantro and a little bit of sesame seed oil to taste. Stir for about 30 seconds.IMG_1326
