Water Spinach (On-Choy) Stir-fry with Minced Garlic 蒜蓉炒空心菜

To stir fry vegetables with minced garlic is a very easy and common way to cook vegetables at Chinese homes. Some vegetables that are good with this method are: water spinach, spinach, broccoli, leaf lettuce, lettuce, baby cabbage, snap pea, snow pea, etc.

We got our water spinach at T & T supermarket. They have hollow stems and look like this:IMG_0596

Ingredients:

  1. Water Spinach: a bunch
  2. garlic: 6 cloves
  3. salt: to taste
  4. vegetable oil: 1/2 tbsb

Steps:

  1. Chop the stem of the water spinach off, then chop them into small segments.

  2. Use a blender or just a knife to mince the garlic. Here is a link with pictures and videos from WikiHow on how to do that. Then turn the heat to medium/high, add oil, then add half of the minced garlic. Be sure to add them when the oil is not too hot, otherwise they will burn.

  3. Wait about 10 seconds until the garlic starts to smell. Add the water spinach, stir a few times (about 30 seconds) until they look done. Add a tiny bit of salt, add the other half of the minced garlic, stir three or four times.IMG_0602
